Crispy Chicken Karaage Recipe: Master Japanese-Style Fried Chicken at Home

Here is everyone's favorite Japanese-style fried chicken, Chicken Karaage. 🙂 It seems like the brining process really defines the taste of the chicken. I fried it crispy with a soy sauce and ginger base. Using only chicken thighs makes it even better! Crispy on the outside and tender and juicy on the inside, it's the best!
📍Chicken Karaage Recipe
*For 2-3 servings
4 chicken thighs
Flour (all-purpose flour) 100cc
Starch powder 100cc
Cooking oil
*A- Marinade Sauce
Sake 2T
Soy sauce 2T
Oyster sauce 1t
Minced garlic 1T
Ginger powder (or minced ginger) 1T
1-Dry the chicken thighs with paper towels, prick them with a fork, and cut into quarters.
2-Mix A's sauce ingredients, rub onto the chicken, and leave in the refrigerator for 30 minutes.
3-Put flour and starch powder in a bag and coat evenly.
4-Before frying, coat again with starch powder and make sure the skin side faces out.
5-Fry at 170℃ for 2 minutes, then rest for 5 minutes.
6-Fry a second time at 180℃ for 2 minutes.
