Quinoa Porridge
Ingredients and Method
• 1 cup quinoa, rinsed
• 2 cups water or plant-based milk (such as almond, soy, coconut milk or hemp)
• Pinch of salt
• 1 tablespoon maple syrup or honey (optional)
• 1/2 teaspoon cinnamon (optional)
• 1 tsp vanilla
• Toppings of your choice (fruits, nuts, seeds, etc.)
Instructions:
1. Rinse the Quinoa:
• Place the quinoa in a fine-mesh sieve and rinse it under cold water for a minute or two. This helps remove the natural coating called saponin, which can make the quinoa taste bitter.
2. Cook the Quinoa:
• In a medium saucepan, combine the rinsed quinoa, water or plant-based milk, and a pinch of salt. Bring to a boil over medium-high heat.
3. Simmer:
• Once it starts boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 15 minutes, or until the quinoa is tender and most of the liquid is absorbed.
4. Fluff the Quinoa:
• Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes. Then, fluff the quinoa with a fork.
5. Sweeten and Flavor (Optional):
• Stir in the maple syrup or honey and cinnamon, if using. You can also add a splash of more milk if you like a creamier consistency.
6. Add Toppings:
• Serve the quinoa porridge in bowls and add your favorite toppings. Fresh or dried fruits, nuts, seeds, a drizzle of nut butter, or a sprinkle of coconut flakes are all great options.
