Ayam Sioh Nyonya / Nyonya Chicken in Tamarind & Coriander Gravy

Ingredients for 6-8pax.
• 1kg Whole Chicken Leg
• 60gm Grounded Coriander Powder
• 160gm Blended Thai Shallot
• 3 tbsp Tamarind Juice
• 2 ½ tbsp. Sugar
• 120ml Water
• 1 tsp Salt
• 900-1000ml of Water
• 1-2 tbsp Black Soya Sauce
Method:
• Marinate chicken with the above ingredients except water, keep in refrigerator overnight.
• Remove the marinated chicken & leave it to room temperature before cooking.
• Heat up wok with medium heat, put in the marinated chicken & slowly overturn it off & on till it being heated up.
• Add water, leave it to simmer & overturn it occasionally to prevent from burning.
• Add in sugar or salt to your taste.
• Simmer till the paste thicken & chicken are tender.
