I was craving Mama’s homemade Penne alla Vodka, and she came through like always! There’s just nothing like it—the rich, creamy sauce with that perfect touch of vodka, crispy pancetta, and fresh basil. She makes it look effortless, and every bite is pure comfort. Ingredients:
• 1 lb penne pasta
• 1/2 cup heavy cream
• 1/2 cup pancetta, diced
• 1/4 cup marinara sauce
• Splash of vodka
• 5 fresh basil leaves
• 2 garlic cloves, minced
• 1/2 cooking onion, finely chopped
• Salt, pepper, and chili flakes to taste
• Fresh Parmigiano-Reggiano cheese, grated
Instructions:
1. Cook Pancetta: Heat a pan over medium-high and cook pancetta until crispy. Remove and drain on paper towels.
2. Make the Sauce: In the same pan, sauté garlic and onion until softened. Season with salt, pepper, and chili flakes. Add vodka and let it evaporate. Stir in cream, basil, pancetta, and marinara sauce. Simmer on low.
3. Cook Pasta: Boil penne in salted water until al dente. Drain and add to the sauce.
4. Serve: Toss well, then plate with grated Parmigiano-Reggiano and basil.
