Deliciously golden and crispy with sweetness from the honey, these are irresistible. The cooking process involves a sequential process of marinating the chicken medallions, dredging in cornflour, coating in a cold batter, double frying and then finally, combining together in the honey sauce! Some techniques including a cold batter and double frying will help with developing a longer lasting and extra crispy texture which I also found to be less greasy as well. To help with portion control, threading these on skewers once done might be an option - one may lose count if placed on a plate otherwise but definitely worth the effort!
