Nonna’s uniquely shaped rice balls are fun to make & delicious to eat!

I recently learnt this from my bestie’s neighbour, a sweet 90+ year old Italian nonna who always starts us off with home brewed coffee and biscuits / cake / chocolates. Really old school generous hospitality that makes you feel warm inside. It was a joy to learn this recipe from her and make it for my family.
2 cups rice (300g, short grain like arborio or sushi)
3/4 tsp salt
2 eggs
1.1 cup Parmesan cheese (100g or more)
pepper
4-5 tbsp parsley (either English or flat leaf parsley)
100g breadcrumbs or blended oats
Oil for shallow frying
Instead of frying immediately, you can also refrigerate it to fry the next day or freeze it for a few weeks. Cover the rice balls with plastic or foil to avoid it drying out.
If frozen, let it defrost first before frying. In our humid weather, defrosting at room temperature could result in a lot of condensation making the coating wet so it is best to defrost in the fridge overnight.
