Today we're out and about in the Latvian kitchen. I used a recipe from the book "Estonian Cuisine - Traditional and modern recipes", which my godchild brought me from vacation.
There is a crispy pork belly with creamy barley, although you could call it a barley risotto. The dill definitely gives the creamy pearl barley that special something and the crispy belly fills the room with crunchy noises. The recipe as a whole is definitely a treat for the palate and will definitely be repeated.

Ingredients:
Pork belly with creamy pearl barley
500g pork belly
1 tbsp mustard
1 tsp chili paste
1 clove garlic
Frying oil
Salt pepper
250 g barley pearls
1 onion
1 clove garlic
200g parsnip
100 ml sparkling wine or grape spritzer
500 ml broth
200 ml cream
Nutmeg, salt & pepper
Grated Gouda
Fresh parsley or dill
