Today on the Barfly we’re tackling the Pimm’s Cup which is essential drinking in the summertime. It’s low ABV, refreshing and perfect for brunch or to replace a nightly glass of wine. The Pimm’s Cup is a very popular British cocktail developed in the mid 1800’s as a way to palatably consume Pimm’s #1. It’s actually known as a “Fruit Cup” which is by definition a cocktail made with a base spirit mixed with fruits and spices, lengthened with a soft drink of some kind. Original Pimm’s Cup

2oz (60ml) Pimm’s
1/2oz (15ml) Lemon Juice
1/2oz (15ml) Curacao
Top Ginger Beer or lemon Lime Soda
Garnish Strawberry, Cucumber, Mint Sprig, Orange wedges

Pimm’s #5
1oz (30ml) Overholt Rye Whiskey
1/2oz (15ml) Amaro CioCiaro
1/2oz (15ml) punt e Mes
3/8oz (11ml) Cointreau
1/4oz (7.5ml) Maurin
Top Ginger Beer
Cucumber ribbon, bushy mint bouquet and seasonal fruit Garnish

DIY Pimm's Cup
2oz (60ml) DIY Pimm's
3-4oz (90-120ml) Ginger Beer
6-8 Mint Leaves
1 Lemon Wedge
1/2 Orange Wheel
Strawberry, Cucumber Ribbon, Mint Sprig Garnish


DIY Pimm’s
1 Cup Gin
3/4 Cup Sweet Vermouth
Scant 3/4 Cup Summer Syrup
1/4 Cup Cointreau
2 tsp Carpano Aperitivo or Aperol
Seasonal Fruit Garnish

Summer Syrup
250g Sugar
250ml Water
1/2 a Cucumber
1 Sprig Lemon Verbana
3 Sprigs Mint
3 Strawberries
