A great make ahead recipe that is easy to put together for an exquisite Sunday Brunch. The pie crust can be made ahead and frozen/thawed or refrigerated for a few days. The quiche filling has bold flavors with feta, sun dried tomatoes, olives and a hint of oregano. Serve this buttery quiche with fruits or a side salad and mimosa to make it fancy!

5 large Eggs
1 cup (50g) Baby Spinach - chopped and sautéed in olive oil
1/2 medium Red Pepper - sliced and sautéed in olive oil
1/2 medium Onion - sliced and sautéed in olive oil
2 large cloves Garlic - finely minced
1/4 cup Kalamata olives - pitted and halved
1/4 cup Sun dried tomatoes (drained from oil) - chopped
1/2 tsp Salt (or to taste)
1 tsp Pepper powder
1 tsp Dried oregano
2/3 cup Whole milk
1/3 cup Feta cheese - crumbled
2/3 cup Shredded cheddar cheese blend - divided for filling and topping
