Saudi Jareesh (Groats) Easy!

Jareesh stands out as a beloved traditional dish across the Gulf region in the Middle East. Enjoyed either by hand or with a spoon, its popularity spans through each gulf country and even within regions of every city, each boasting its own distinct version with subtle variations. Recipes differ across locales; some favor it with chicken, while others opt for a vegetarian approach. There are two main versions: red and white. Today we are making white. Red Jareesh incorporates tomato paste for color and extra spices, though both versions promise a rich, authentic taste of Gulf tradition. Enhance either with hashwa for a truly hearty Gulf inspired dining experience. Don't forget the tobasco!

*Correction: for every 1 cup dry jareesh I typically use 3-4 cups water.*

Ingredients:
For the Jareesh:
1 small white onion, diced
1/4 bell pepper
1/2 c butter or ghee
1 1/2 c jareesh, soaked overnight
1/2 c calrose rice, soaked at least 1 hour
400-500 grams chicken breast
1 maggie cube
salt
4-6 cups hot water (roughly)
1 T cumin
1 to 1 1/2 c laban (buttermilk)
1 c plain yogurt
5 T powdered milk
1/2- 3/4 c milk
1 can geshta heavy cream ( we tried this ( optional) and liked it!)

Hashwa/Hashoo ( Onion topping):
1/2 stick butter or ghee
1 diced onion
1 T tomato paste
1/2 t cumin
1 -1 1/2 t lumi powder (dried lime powder)
1/4 t tumeric
1/4 t cinnamon
salt and pepper
3 whole chilis
water
