Sweet Potato Cake
For the cake:
3 cups of peeled and grated sweet potatoes raw
2 1/2 cups self-rising- flour
1 1/2 cups granulated sugar
1 cup of vegetable oil
3 eggs
1 cup of buttermilk
2 tablespoons ground cinnamon
1 teaspoon of nutmeg
2 tablespoons of vanilla extract
1 cup of chopped pecans
Frosting:
1 stick of butter
8 oz full fat cream cheese
1 lb of 10x powdered sugar
2 tablespoons of vanilla extract
1 to 2 tablespoons of milk
1 cup of chopped pecans
Directions:
Preheat oven to 350 degrees. Prepare 3-8 inch round cake pans lined the bottom with parchment paper or grease and lightly dust with flour. Peel the sweet potatoes and use a grater or food processor to shred the sweet potatoes, set aside. Beat the eggs until light and fluffy. Add the sugar and beat on low speed until smooth. Then add the oil and continue beating on low speed until well mixed, then add buttermilk. In a medium bowl. Combine the remaining dry ingredients. Slowly add the dry ingredients to wet ingredients and beat until Inc. fold in pecans in sweet potatoes and 1 tablespoon of vanilla extract, mix well. Pour the batter into prepared pans, dividing evenly, Bake cake 25/30 mins until toothpick comes out clean.
Frosting
Cut the butter into pieces and whip the butter for 3 to 5 minutes scraping down the ball then add cream cheese and cream together for 2 to 3 minutes until they are free of lumps scrape down the bowl occasionally. Slowly add powdered sugar 1 cup at a time, then add vanilla and one cup of pecans and just a little milk if it’s too stiff you want it creamy but not runny.
