This is our Binisaya'ng papaya atsara recipe.
The simplest ingredient combination. Bare neccessity. Squeezed out grated unripe papaya to get rid of that aplod (astringent?) taste. Added with just pepper for aroma, and onions for tradition.
The pickling solution is just vinegar (used homemade coconut suka here), salt, sugar, and water. Adjust to your liking.
