Frying leaves is a delicate art, and not at all like making french fries. It requires a low temp and a delicate touch, but the extra care is worth it. These edible leaves, from shiso and kinome to root beer leaf and hibiscus, offer a range of flavors, textures and colors that will compliment dishes on their own or, as seen here, can be combined as the star of the show for an amuse bouche or hotel room amenity.
