This Ube White Russian has the necessary means for a necessary means to replace your regular white russian. It's light but still creamy enough to satisfy those cravings, but with the tropical notes from the coffee and ube it is a perfect summer cocktail. It has all those coffee notes but with the added sweetness and vanilla notes from the ube foam. In this video we'll make our own rapid-infused coffee vodka, using an ISI whipper. We'll also be using ube jam, coconut milk and more coffee beans to make a delicious - seriously absolutely incredible - ube foam to top it all off. This cocktail is actually a dairy free white russian. The coconut milk is such a worthy replacement of the heavy cream without overpowering the drink.

I tried make this ube foam two different ways - first by combing ube powder, which I've used in previous projects, but that powder wasn't giving me the color that I wanted. It was rather gray, so I ended up using an ube jam, which may be easier to find. The ube foam is something I think I'll be making more often as it is so good on top of coffee, tea, yogurt, oatmeal, you name it. Delicious.

The Little Lebowski Ube Achiever | Ube White Russian

1 1/2 oz coffee-infused vodka
1/2 oz simple syrup
2 drops of vanilla extract
Ube coconut milk foam to top

Stir for 30 seconds and pour into a rocks glass filled with ice. Top with ube coconut milk foam.
