These cookies came out really good. They are chewy and I have a hard time tasting that they are gluten free. The texture of the oats from pulsing them is great. The brown butter was easier to make than I expected. The only issue I had with the cookies was the icing. While dipping them and creating a light coating is a more classic look, I found it easier to drizzle it over the tops of the cookies.

2 Cups (300g) Gluten-Free Measure-For-Measure Flour
1¾ Cup (150g) Gluten-Free Rolled Oats
½ tsp Baking Soda
1½ tsp Ground Cinnamon
¼ tsp Ground Nutmeg
½ tsp Kosher Salt
Wet Ingredients:
1 Cup (227g) Butter
1 Cup (213g) Brown Sugar
¾ Cup (150g) Granulated Sugar
2 Large Eggs, Room Temperature
2 tsps Vanilla Extract
2 Tbs Molasses
Icing Ingredients
1½ Cups (180g) Powdered Sugar
¼ tsp Vanilla Extract
1½-2 Tbs Milk of Choice
