Incredible Birria Nachos 😈

2 lbs of short rib
Salt and pepper to taste

5-10 arbol chilis
3 guajillo chilis
3 ancho chilis
1 white onion
10 cloves garlic
1/4 cup tomato paste
1/4 cup white vinegar
1 cup of chili water

1 Tbsp oregano, chili, paprika
2 tsp cumin
Salt and pepper to taste (around 1 Tbsp)

Deglaze with 1/4 cup beef stock

2 avocados
1/4 cup yogurt or sour cream
1/4 cup oil
1/2 cup cilantro
2 limes
1/2-1 cup water

Serve on top of tortilla chips
Finish with cilantro, onion, and cotija cheese
