柚子、紅莓及紅豆沙冰皮月餅 - Snowy MoonCake 是一種新式中秋月餅,起源於香港;用類似麻糬做皮,加入不同口味的餡料,例如柚子、紅莓及紅豆沙等,甜而不膩,十分好食。

冰皮材料: (大約重480g,可分為21件,22-23g/pc)
1. 糯米粉 - 60g
2. 粘米粉 - 60g
3. 澄麵 - 30g
4. 白砂糖 - 35g
5. 練奶 - 30g
6. 椰漿 - 240g
7. 生油 - 20g+15g+5g
8. 粟膠/水飴 - 20g
9. 甜菜粉 - 3-4g
內餡材料: (28-30g/pc)
1. 去皮綠豆沙 - 500g
2. 紅豆沙 - 250g
3. 柚子醬 - 20-25g
4. 紅莓乾 - 15g
手粉材料:
1. 糯米粉 - 50-60g
Snowy MoonCake is a kind of new style Mooncake that starting from Hong Kong and spreading to all-over the world. It’s make with Mochi skin, and staffing with different kind of fillings. It’s very delicious.
Snow Skin: (around-480g,divide into 21pcs, 22-23g/pc)
1. Glutinous Rice Flour - 60g
2. Rice Flour - 60g
3. Wheat Flour - 30g
4. Granulated Sugar - 35g
5. Condensed Milk - 30g
6. Coconut Milk - 240g
7. Corn Oil - 20g+15g+5g
8. Corn Syrup - 20g
9. Beetroot Powder - 3-4g
Filling: (28-30g/pc)
1. Mung Bean Paste - 500g
2. Red Bean Paste - 250g
3. Critics Jam - 20-25g
4. Dried Cranberry - 15g
Hand Powder:
1. Roasted Glutinous Rice Flour - 50-60g
