Cinnamon Sugar Donut Cottage Cheese Mug Cake (Melt-in-Your-Mouth!)
This mug cake gives you the joy of a cinnamon sugar donut in just minutes—with a sneaky dose of protein from cottage cheese. It’s fluffy, sweet, and utterly addictive. I love making this on cool mornings when I want something warm and cozy in a pinch.
Ingredients:
For the cake:
1/4 cup cottage cheese (full fat to make keto/low carb)
1 egg
1 tbsp maple syrup or honey (sugar free and keto approved can be used)
1/4 cup flour (swap with King Arthur’s Keto Baking blend-the 1:1 mix).
1/4 tsp baking powder
1/2 tsp cinnamon
Pinch of salt
For the topping:
1 tsp melted butter
1/2 tsp cinnamon
1 tsp sugar (use keto approved sweetener for a swap here)
Instructions:
1. Blend cottage cheese, egg, and maple syrup until smooth.
2. Stir in flour, baking powder, cinnamon, and salt.
3. Pour into a greased microwave-safe mug.
4. Microwave for 1 minute 30 seconds to 2 minutes until set.
5. Mix the topping and brush over the hot cake or sprinkle it on top.
6. Let cool briefly. Serve warm and fluffy.
