In this video, I'm sharing my pumpkin seed milk. It's nutritious, has a pleasant taste and is easy to make. For vegans, pumpkin seeds can be beneficial as a source of zinc which omnivores usually get from meat and fish. They're also a source of choline, an essential nutrient that non vegans get for example from eggs. Homemade pumpkin seed milk is compatible with a whole foods plant based (WFBP) or high carb low fat (HCLF) diet, as suggested by Dr. Michael Greger of nutrionfacts.org.
All pumpkin seeds are edible, you can use any variety for this plant milk. As a natural sweetener I'm using glycine, an amino acid powder that has a sweet taste and a low glycemic index. It increases the body's collagen production and improves sleep quality
// PUMPKIN SEED MILK //
Ingredients:
• 1 cup raw pumpkin seeds (any variety)
• 4 cups water
• 1 pinch of glycine or other sweetener of your choice (optional)
Method:
First, fill the pumpkin seeds into a bowl and cover them with water. Let them soak in the fridge overnight. The next morning, strain and rinse them. Then transfer the pumpkin seeds into your high speed blender (mine is an Omniblend). Add the glycine or sweetener of your choice
Blend everything for two minutes at highest speed. Then pulse for a few seconds to incorporate any particles from the walls of the blender, then blend for another two minutes.
This homemade plant milk has a pleasant nutty flavor and can be used like any other plant milk, in coffee, for baking, in vegan milk shakes and smoothies etc.
