Ingredients – Moong Dal Kachori ( Dough)
All-purpose flour (Maida) – 2 cups
Carom seeds (Ajwain) – 1½ tsp (lightly crushed)
Salt – 1½ tsp or to taste
Moyan (Desi ghee / Refined oil) – 1¼ cups
Water – as required
Oil / Ghee – for deep frying
Stuffing (Moong Dal Filling)
Split yellow moong dal (without skin) – ½ cup (soaked)
Oil – 2 tsp
Nigella seeds (Kalonji) – ½ tsp
Green chillies – 1 tbsp (finely chopped)
Ginger – 1 tsp (grated)
Coriander seeds – 1 tbsp
Fennel seeds – 1 tbsp
Cumin seeds – ½ ts
Asafoetida (Hing) – 1¼ tsp
Turmeric powder – 1¼ tsp
Red chilli powder – 1½ tsp
Coriander powder – 1 tsp
Garam masala – 1½ tsp
Salt – to taste
Sugar – 1 tsp
Dry mango powder (Amchur) – 1 tsp
Desi ghee – 1 tbsp
Dried fenugreek leaves (Kasuri methi) – 1 tbsp (roasted & crushed)
Baking soda – ¼ tsp
