How to Make Singapore Old-School Prawn & Pork Noodles 新加坡传统排骨虾面 Chinese Soup Recipe
Serves 3-4

INGREDIENTS

For the Blanched Pork
500g (17.6oz) pork soft bones, cut into small pieces

For the Soup Stock
35g (1.2oz) dried shrimp
10g (0.4oz) white peppercorns
2.5L (84.5fl oz) water
500g (17.6oz) prawns, peeled & deveined
2 bulbs of garlic
1 chicken stock cube
Prawn heads and shells from 500g prawns
25g (0.9oz) rock sugar
3 tsp salt

For the Lard & Shallot Oil
300g (10.6oz) pork fat, cut into small bite-sized pieces
⅓ tsp salt
10 shallots, thinly sliced

Other Ingredients
Some cooked yellow noodles (usually 120g per person)
A handful of kang kung / morning glory vegetables
Some fish cakes, sliced
