This is a classic Sichuanese dish, it is basic but full of flavours! It has gained so much popularity and now many restaurants make it, not just in China but is now famous all over the world! I hope you’ll enjoy this simple and delicious dish and do let me know what you think of it.

🌶 Dry-Fried Green Beans with Minced Pork Recipe:
*Ingredients*
400g green beans
75 grams of minced pork - fatty one is better
A handful of Sichuan peppercorns
Some dried chillies - to taste
Garlic (3 cloves) and ginger (3g)
25g finely chopped preserved vegetable - Yacai - optional
3 tbsp of cooking oil
1 tsp of light soy sauce
2 tsp of salt
A splash of Chinese vinegar
*Method*
Preparation (12 mins or less):
1. Remove the top and tail of the green beans and snap them into halves or use ready-trimmed ones.
2. Lightly chop the pork mince to loosen it up.
3. Finely chop the garlic and ginger.
4. Cut the chillies into small chunks and shake out the seeds.
Cooking (around 15 mins):
1. Warm the wok first and then pour in 3 tbsp of cooking oil.
2. On medium heat, pour in 3 tbsps of cooking oil and 1 tsp of salt. Add in all the green beans.
3. Constantly stir and turn the beans, cook for around 8 minutes on medium-high heat (depends on your stove's power), until you can see most of the beans have wrinkled on the outside and turned just slightly brown. Remove the beans from the pan and set aside.
4. Clean the pan and add in 1 or 2 tbsp of cooking oil (depends on how much fat your pork mince has, use a bit more oil if you mince is quite lean like mine).
5. On medium-high heat, put in the pork mince and stir, the fat and water will gradually come out. Cook for around 1 minute and the pork mince should have shrunk and become a bit crispy.
6. And then sizzle the aromatics. Tip in the chopped ginger, garlic and Sichuan peppercorns, and add the chillies last, so they don't burn.
7. Return the green beans to the work and stir and blend them with other ingredients. Add in the pickled Yacai here (optional).
8. Add in 1 tsp of salt, 1 tsp of light soy sauce, and just a splash of vinegar. Turn off the heat, serve the dish with rice.
🌶 Vegetarian version: replace the pork mince with mushrooms (also chop the mushrooms into a fine mince) or simply just cook with the beans. :)
🌶P.S. - don’t eat/bite on the peppercorns unless you really fancy a go!
