~Holiday Peanut Butter Krispie Balls~
1 1/2 Cups Organic Peanut Butter
1/4 Cup Softened Butter
1 Cup Powdered Sugar
2 1/2 Cups Krispie Cereal
2 Cups Semisweet Chocolate Chips
1 Square of Bakers Chocolate
1 Tbsp Coconut Oil
Jimmies, or (chopped nuts, or coconut)
In a large mixing bowl, cream together the peanut butter, butter, and powdered sugar.
Stir in the Krispies until well combined.
Once mixed, place in refrigerator for 30 minutes.
Shape the mixture into 1/2” balls, place on wax paper lined cookie sheet, and chill in the refrigerator for at least 30 minutes.
In a microwave safe bowl add chocolate chips, heating in 20 to 30 second intervals, when almost melted add coconut oil, continue heating and stirring until chocolate is melted and smooth.
Once chocolate has melted, roll the chilled peanut butter balls into the melted chocolate and place back on the wax paper lined cookie sheet. Add any jimmies, chopped nuts or coconut and place back in refrigerator until the chocolate is firm or until you’re ready to serve.
