Welcome to my peaceful village life in the north of Iran! I’m Shahin, and today I’m sharing one of my favorite traditional dishes — Shami Pook, a crispy meat patty from Gilan province. This dish is full of flavor, family tradition, and made with love using local ingredients and village cooking methods. Let’s cook it together!
🍽️ Ingredients:
• 300g boiled and shredded beef
• 1/2 cup yellow split peas (lapeh)
• 1/2 cup chickpeas
• 1 large onion (juiced & drained)
• 2 eggs
• Salt, turmeric, black pepper (to taste)
• Oil for frying
🥄 How to Make It:
First, boil the meat until it’s soft and shred it well. Cook chickpeas and split peas until tender, then mash them. Mix the shredded beef, mashed legumes, drained onion juice, and beaten eggs in a large bowl. Add salt, turmeric, and pepper to taste. Knead the mixture thoroughly and let it rest for 10–15 minutes. Shape into small round patties. Fry them in hot oil until both sides are golden and crispy. Serve with fresh herbs, pickled vegetables, and optionally rice — or enjoy them the way we do in our village kitchen!
