Eggs, Potatoes & Avocado

🧺 Ingredients
4 eggs, well beaten
1 teaspoon black pepper
Salt to taste
Boiled potatoes, chopped
1 avocado, chopped
1 tablespoon coconut oil
Salami slices
Grated cheese (4–5 slices or a handful)
Paprika
Chili (optional)
Cream cheese
Brown bread
🍳 Instructions
Beat the eggs in a bowl and season with black pepper and salt.
Add the chopped boiled potatoes and chopped avocado to the eggs. Mix well.
Heat a pan over medium heat and add the coconut oil.
Pour the egg, potato, and avocado mixture into the pan and cook gently.
Add salami on top.
Sprinkle grated cheese over everything.
Cover the pan with a lid and cook for 2–3 minutes, until the cheese melts.
Finish with paprika and chili to taste.
Serve hot with brown bread and cream cheese on the side.
