Hyderabadi Mutton Biryani
Ingredients:-
Mutton - 1 kg
Basmati Rice - 600g(soaked for 1 hour)
Brown onions - 1 cup(4 onions)
Biryani Masala - 1 tb spn
Coriander powder- 2 tb spn
Chilli powder- 2 tb spn
Lemon - 1
Curd - 150g
Mint leaves- 1 bunch
Coriander leaves - 1 bunch
Oil - 100ml
Salt - 1.5 tb spn
Water - As Required
Raw Papaya Paste - 1 tb spn(optional)
Ginger garlic paste- 2 tb spn
Green Chilli Paste - 2 tb spn(12)
Whole spices - 1 tsp(for rice)
Hyderabadi Biryani Masala
Recipe for 1 kg meat
Ingredients:-
Green Cardamom- 5 pcs
Cloves - 6
Star Anise - 1
Cinnamon- 1/2 inch
Black Cardamom- 1
Nutmeg- 1/4 piece
Mace - 1
Bay leaf - 2
Biryani Phool - 1 piece
Kebab Chinni - 5pcs (optional)
Pipli - 1 piece (optional)
Jeera - 1/2 tsp
Shah Jeera - 1/2 tsp
Grind all the above spices into a coarse powder & use it for all kinds of biryani’s
Marinate the meat with spices & some raw papaya. Keep aside for 1 hour minimum. Then layer with cooked basmati rice as shown.
Serve Hyderabadi Kachi Ghost Biryani with Raita & Salan
