MUTTON POLOV
INGREDIENTS
1. Mutton 1/2 kg
2. Long red chillies-12
3. Coriander seeds-2tbsp
4. Jeera-1tbsp
5. Pepper corn-10-15 nos
6. Cloves-4-5
7. Cinnamon-2 sticks
8. Khus khus-1tsp
9. Onion-1
10. Tamarind-1 lime sized
11. Turmeric-1/4tsp
12. Garlic-4-5 flakes
13. Coconut-1
TO COOK MUTTON
1. Onion-3 sliced
2. Tomatoes-3 finely chopped
3. Coriander leaves-1 cup
4. Ginger garlic paste-1 tbsp
5. Curry leaves-2 sprig
6. Extract 4 cups of thin coconut milk and 2 cups of thick coconut milk
FOR SEASONING
1. Onion-1 sliced
2. Oil-1tbsp
METHOD
1. Fry all the dry ingredients without adding oil except tamarind, garlic and turmeric
2. Grind all these ingredients with 1 cup of thin coconut milk
3. Cook the ashgourd pieces (cut into dice shaped) with 1 cup of thin coconut milk
4. Now take a vessel add cooked mutton and ashgourd pieces and stir it well
5. Now add the remaining thin coconut milk to it ,stir it well
6. Add masala paste and masala water to the cooked meat, also add thick coconut milk
7. Bring it to a boil
FOR SEASONING
1. Heat oil in a pan and add sliced onion
2. Fry it till it turns brown
3. Pour it to the cooked mutton gravy
4. Mutton polov is ready
