Ingredients (सामग्री) :
🌿 Lasuni Palak Khichdi (लहसुनिया पालक खिचड़ी)
🍚 Main Khichdi Ingredients (मुख्य खिचड़ी के लिए सामग्री):
1 cup Basmati Rice (बासमती चावल)
½ cup Yellow Moong Dal (पीली मूंग दाल)
¼ tsp Turmeric Powder (हल्दी पाउडर)
1 Black Cardamom (काली इलायची)
1 Bay Leaf (तेजपत्ता)
1 tsp Ghee (घी)
Salt – as per taste (नमक – स्वाद अनुसार)
Water – as required (पानी – आवश्यकता अनुसार)
🍲 For First Tadka (पहला तड़का):
3 tbsp Ghee or Oil (घी या तेल)
1 tsp Cumin Seeds (जीरा)
2 Dry Red Chillies (सूखी लाल मिर्च)
Few Curry Leaves (करी पत्ते)
¼ tsp Asafoetida (हींग)
1 tbsp Chopped Ginger (कटा हुआ अदरक)
3 tbsp Chopped Garlic (कटा हुआ लहसुन)
2 tsp Chopped Green Chillies (कटी हुई हरी मिर्च)
1 Chopped Onion (कटा हुआ प्याज़)
1 Chopped Tomato (कटा हुआ टमाटर)
1 tbsp Cumin-Coriander Powder (धनिया-जीरा पाउडर)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Garam Masala (गरम मसाला)
½ tsp Sugar (चीनी)
Salt – as per taste (नमक – स्वाद अनुसार)
Water – as required (पानी – आवश्यकता अनुसार)
1 tsp Lemon Juice (नींबू रस)
1 tsp Kasuri Methi (कसूरी मेथी)
🔥 For Second Tadka (दूसरा तड़का):
2 tbsp Ghee (घी)
1 tsp Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर)
¼ tsp Asafoetida (हींग)
1 Dry Red Chilli (सूखी लाल मिर्च)
6 Garlic Cloves, julienned (लहसुन की कलियाँ – लंबी कटी हुई)
🥬 For Spinach Puree (पालक की प्यूरी के लिए):
1 bunch Spinach, blanched (1 गुच्छा पालक – उबाला हुआ)
Few Fresh Mint Leaves (थोड़े ताज़े पुदीने के पत्ते)
½ cup Fresh Coriander (½ कप ताज़ा धनिया)
3–4 Green Chillies (३–४ हरी मिर्च)
7–8 Garlic Cloves (७–८ लहसुन की कलियाँ)
1 Ice Cube (१ बर्फ का टुकड़ा)
