We travel a lot and at times being vegan on the road means less eating out and more cooking for ourselves. It's a good thing we love whipping up vegan creations... now if only we could hire a maid to do our dishes lol. Many of you have requested a few meal ideas for #vanlife in Mexico so we take you along with us for a full day of eating. This WHAT WE EAT IN A DAY as vegan van lifers shows our breakfast, lunch and dinner while hanging out with our friends the Minimal Millennials in San Antonino Texas ❤️


Eamon and I have been vegan for over a year now (vegetarian for a few before) and it was and continues to be the best decision we've ever made. Not only do we feel better, lighter, and more full of energy but we also live a lifestyle that we know contributes less to the endless suffering of innocent animals and to the destruction of our planet.

Breakfast:

Breakfast Part 2
♥Yogurt parfait ♥

Your choice of plant based yogurt (we like coconut based)
Your choice of plant based granola
Top with favourite fruits and coconut shreds

Lunch:

♥ Beyond Meat Burgers♥

Dinner:

♥ Vegan Tacos♥

Veggie/Field Roast Filling:
1. Sautee onion with spices (salt, pepper, garlic powder, cumin, garlic)
2. Add chopped bell peppers and mushrooms
3. Mix crumbled Chipotle Field Roast into the onion/veggie mix and heat until warm

Toppings:
1. Chop green onion, tomatoes, avocados and limes to garnish
