Otak-otak is one of the many famous Nyonya style of fish cake, yet can cook the prawns and squid too. I got this recipes from my Godmother who has cook the best otak-otak till my mum learned and copy her recipes.
According to her, the best otak-otak cooking method is DO NOT add in addition water besides water use to extract the coconut milk ( concentrated Santan) and juice release from our seafood. Any addition of water will make the otao otak paste too liquidity, and end up need to add more cornstarch. Consequently, the otak-otak will not be able to be smooth without feeling like cake.
