Andrew Stow, a British baker, came to Macao to work. Combining Cantonese and British dessert recipes, he experimented with different ratios of flour, egg, and cream to create Macao's unique egg tarts which are known simply as Portuguese tarts today. For years now, so-called Portuguese tarts have occupied a central place in Macanese cuisine.
