Broiled sweet & spicy chicken thighs
You can make these as spicy (or not) as you’d like! I like using a few tablespoons of watered down teriyaki sauce, 2 tbs soy sauce, 2 tbs sriracha or chili garlic sauce, and a good sprinkle of garlic powder. I’ve also used the Chick Fil-A sweet & spicy sriracha sauce or Panda Express honey sesame sauce in place of teriyaki sauce. It always turns out so good!
Combine the ingredients directly in the baking dish, and then coat your chicken thighs in the sauce. Bake at 400° for about 20 min. Then turn the chicken over and recoat with the sauce in the pan. Broil for about 10 min or until fully cooked and a bit charred to your preference!
“Super greens”
I chopped up a big bag of Brussels sprouts instead of cabbage, but cabbage would also work— and that is what Panda Express uses.
I also used a large bag of kale, and one large bag of broccoli. I chose to microwave steam the broccoli first since the other greens are thin and cook quicker than the broccoli.
While the broccoli was steaming, I combined a whole head of minced garlic, 1 tbs sesame oil, 1 tbs olive oil, and 2 tbs soy sauce.
I steamed the kale and Brussel sprouts in this mixture along with about 1 cup of water. As the greens cook down you can taste and add more seasoning as needed. I added some salt and garlic powder.
Chicken Jalapeno popper meatballs
1 lb ground chicken
1 egg
2 fresh jalapeños
About 12 saltine crackers crushed fine
1 small onion
2 oz shredded cheese
I used a standard baking scoop to portion out aprox 23 meatballs and browned them in a skillet with vegetable oil.
