In this episode, we dive into Wuyi Oolongs (武夷山烏龍茶 | wǔyíshān wūlóngchá). Oolong is the type of tea defined by being "partially oxidized" (~20%-80% oxidation). In the Wuyi Mountains, oolong teas exhibit a very specific dìwèi 地味 ("flavor of the earth") - a mineral flavor known as the yán wèi 岩味 ("Rock Taste"). This is an iconic taste in the world of Chinese tea, and paired with a skilled charcoal roasting process, these teas are some of the finest in the world.
