Fortnight Cinnamon Rolls (Makes ~12 rolls)

Ingredients:

1½ tsp instant yeast

⅓ cup granulated sugar

¾ cup whole milk, room temp

3¾ cups bread flour (plus more for rolling)

2 large eggs

4 tbsp unsalted butter, softened

1½ tsp salt

2 tbsp unsalted butter, melted (for filling)

Cinnamon Roll Sugar:

½ cup + 2 tbsp brown sugar

½ cup + 2 tbsp granulated sugar

1½ tbsp ground cinnamon

¾ tsp salt

Cream Cheese Frosting:

2 tbsp unsalted butter, softened

3 oz cream cheese, softened

1 cup powdered sugar

½ tsp vanilla extract

¼ tsp salt

Instructions (Quick Version):

Mix yeast, sugar, and milk. Add flour, eggs, butter, and salt. Knead until smooth (about 8 minutes).

Cover and let rest 30 minutes (or refrigerate overnight).

Roll dough into an 18×12-inch rectangle. Brush with melted butter and sprinkle evenly with cinnamon sugar.

Roll tightly, slice into 1½-inch rolls, and place in a greased 9×13 pan.

Bake at 350°F for 25–30 minutes, until golden.

Mix frosting ingredients until smooth. Frost rolls once completely cooled.
