Slice and Bake Cranberry Orange Shortbread

Oh my word! I had to send most of these cookies home with my friend because I kept wanting to eat them. The fresh flavors of the cranberries and orange and the wonderful taste of butter with a simple sweet taste is so delightful! So many good flavors. I have also made these with lemon zest and dried thyme or rosemary. People love them!
You could prepare these to the point of rolling them up, then put the roll in a ziplock back and freeze them until needed.
Here is the recipe...
1 cup butter
1/2 cup granulated sugar (or raw sugar, or coconut sugar, or maple sugar)
Zest of one orange
1 heaping cup of cranberries (you can cut this down to 3/4 cup if too much)
1 tsp vanilla
2 cups all purpose flour
Instructions:
1. Chop cranberries and set aside
2. Cream butter, sugar, zest and vanilla in mixer or food processor.
3. Add flour a little at a time until throughly mixed. Dough will be in lumps.
4. Add in cranberries just until mixed throughout.
5. Press dough together in bowl and then roll on counter (can be lightly floured) into a roll that is 2" in diameter. Size of roll will determine diameter of cookie.
6. Let cookies set in fridge for 3+ hours.
7. Remove roll from fridge and slice between 1/3" and 1/2" wide.
8. Place cookies on cookie sheet covered with parchment paper.
9. Bake in 350° oven from 12-20 minutes depending on thickness of cookie.
10. Enjoy!
