Ingredients:
4 kg of eggplants
500g of peeled onions
500g of green and red bell peppers
500g of carrots
500g of peeled tomatoes
Half of a hot pepper
2 cloves of garlic
250ml of vegetable oil
15-20 pieces of black peppercorns
2 bunches of parsley
50ml of apple or grape vinegar
Instructions:
1. Slice the eggplants and sprinkle them with salt. Wait until the bitter juice is completely released.
2. Sterilize the jars. You will need 5 jars of 700g each and 1 jar of 500g.
3. Sterilize them for 10-12 minutes.
