Raw banana, tempered with spices and cooked with Spinach.
RAW BANANA WITH GREENS
Ingredients
2 raw bananas, boiled with skin
25-30 fresh spinach leaves
1 small bunch fresh green amaranth (chavli)
2 tbsps oil
½ tsp split skinless black gram (dhuli urad dal)
½ tsp mustard seeds
2 dried red chillies, broken
15-20 curry leaves
¼ tsp asafoetida
Salt to taste
3 tbsps scraped fresh coconut
2 green chillies
1 inch ginger
3-4 garlic cloves
1 tbsp roasted chana dal
A pinch of turmeric powder
1 inch ginger, cut into thin strips
Method
1. Heat oil in a pan, add split black gram, mustard seeds, broken red chillies, curry leaves and asafoetida and saute till the seeds splutter.
2. Add spinach, amaranth and salt and mix. Add ¼ cup water and mix. Cover and cook.
3. Grind together coconut, green chillies, ginger, garlic, roasted chana with little water.
4. Peel the bananas, slice into round pieces and add to the pan. Add a pinch of turmeric powder and mix.
5. Add the ground paste and mix. Cover and cook for 4-5 minutes.
6. Transfer into a serving dish and serve hot garnished with ginger strips.
