Today, I shared the recipe of Japanese traditional pickles, "Namasu". It's daikon and carrot marinated in sweet vinegar sauce. We usually make and eat Japanese New Year. Rice vinegar 240 grams
Water 200 grams
Sugar 100 grams
Kombu 3 grams
※It’s okay to use grain or white wine vinegar too.
Daikon 420 grams
Carrot 65 grams
