Pateelewala Meat
INGREDIENTS
1/2 cup of ghee
1” cinnamon stick
2 star anise
2 black cardamoms
5 green cardamoms
7-8 cloves
15 peppercorns
1 tbsp of garlic paste
1 tbsp of ginger paste
1 tbsp of green chilli paste
1 tsp of turmeric powder
1/2 cup of fried onion paste
1/2 cup of tomato puree
2 tbsp of red chilli powder
1/2 cup of water
1 kg mutton
3 cups of whisked yogurt
1 tsp of garam masala powder
1 lt of water
1/2 cup of freshly chopped coriander leaves
1” ginger julienned
3-4 green chillies sliced thin
Salt to taste
METHOD
Heat 1/2 cup of ghee
Add whole spices- 1” cinnamon stick
2 star anise
2 black cardamoms
5 green cardamoms
7-8 cloves
15 peppercorns
Add 1 tbsp of garlic paste
1 tbsp of ginger paste
1 tbsp of green chilli paste
Add 1 tsp of turmeric powder
Add 1/2 cup of fried onion paste
Fry it for a minute
Add 1/2 cup of tomato puree
Add 2 tbsp of red chilli powder
Add 1/2 cup of water
Add 1 kg mutton
Saute the meat for 4-5 minutes on a high to medium flame
Add 3 cups of whisked yogurt
Add 1 tsp of garam masala powder
Mix it well
Add 1 lt of water
Add 1/2 cup of freshly chopped coriander leaves
1” ginger julienned
3-4 green chillies sliced thin
Mix well
Add salt to taste
Give it a good stir
Cook till the meat is done
