How are vegetable pizza bases made in a high-production bakery environment? At the AMF Innovation Centre, we demonstrate the production of carrot and beetroot dough. Demo shown at reduced speeds with high-speed pizza production possible up to 80,000 pizzas per hour. Mixing the ingredients, using about 35% vegetable fibers, the base can suitably be referred to as vegetable dough. On the AMF Tromp Sheeting Line, we sheet the dough, stretch it using roller systems while maintaining low stress on the dough. This allows the dough to remain flexible, moist and maintain its unique characteristics, to bake nicely in the production oven or home oven. This fully automated sheeting pizza line offers dough make-up, including topping of sauce, oil, cheese, vegetables, spraying systems, and all equipment needed for professional pizza production. #vegetablepizzaproduction #pizzaproduction
