Classic and Heartwarming Khichdi
Ingredients:
1/4 cup rice (basmati recommended)
2 tablespoons split yellow moong dal (washed)
2 cups water (adjust for desired consistency)
1/2 teaspoon turmeric powder
1/2 teaspoon cumin seeds
1 small green chili, finely chopped (optional)
1 teaspoon ghee or oil
Salt to taste (about 1/4 teaspoon)
Optional vegetables: 2 tablespoons diced carrots, peas, beans
Method:
Rinse rice and dal thoroughly and soak for 15–20 minutes (optional).
Heat ghee or oil in a saucepan or pressure cooker. Add cumin seeds and green chili, sauté briefly until fragrant.
Add rice, dal, turmeric, salt, and optional vegetables. Stir for 1 minute to combine.
Add 2 cups of water and bring to a boil.
Stovetop: Cover and simmer for 20–25 minutes until soft.
Pressure cooker: Cook for 2 whistles on medium heat.
Check consistency and add more water if needed, then simmer a few more minutes.
Serve hot, with a dollop of ghee, yogurt, or pickle if desired.
Pro-Tips:
Soaking dal and rice makes cooking faster and results in a smoother texture.
Simmer gently; high heat can make it mushy too quickly.
Add vegetables early for soft texture or later for crunch.
Ghee adds richness but can be skipped for a lighter version.
