I use a homemade jerk marinade that includes allspice, thyme, garlic, scotch bonnet peppers, and more to deliver that signature island heat. Baked to perfection in the oven, this turkey is a flavorful alternative to traditional roast recipes. Great for Thanksgiving, Christmas, Sunday dinner or anytime you just want turkey!

Here is the recipe:
Ingredients:
6350g/ 14lbs whole turkey (turkey size of your choice)
Jerk Marinade:
8g/ 2 tsp ground allspice
8g/ 2 tsp ground cloves
4g/ 1 tsp ground cumin
4g/ 1 tsp cinnamon
4g/ 1 tsp nutmeg
100g/ 1 cup chopped scallions
8g/ 2 tsp salt
8g/ 2 tsp black pepper
80g/ 1/2 cup finely chopped white onion
3-4 Scotch Bonnet peppers (chopped and de-seeded)
28g/ 2 tbsp fresh ginger (chopped)
28g/ 2 tbsp. vegetable or olive oil
14g/ 1 tbsp minced garlic
14g/ 1 tbsp thyme
28g/ 2 tbsp brown sugar
14g/ 1 tbsp lime juice
14g/ 1 tbsp soy sauce
21g/ 1.5 tbsp. white vinegar

Instructions:
Preheat oven to 350F/176C degrees
In a food processor combine all ingredients (except turkey) and blend to a smooth paste
Rinse and dry turkey thoroughly
Prepare turkey according to manufacturer’s instructions
Place turkey on roasting pan with rack
Transfer jerk seasoning to turkey coating thoroughly (including turkey cavity)
Secure turkey legs with rope/twine.
Cover and marinate turkey in refrigerator for 4-6 hours (optional)
Bake @ 350F/176C for 182 minutes (approx. 3 hours) oven vary.
13 minutes per pound X 14lb turkey = 182 mins (3.03 hours)
Turkey internal temperature should read 165F/74C (use a meat thermometer)
Insert the meat thermometer into the center of the breast, avoiding bone.
Allow turkey to rest for 20 minutes before serving

Freezing Cooked Turkey
Cool it quickly: Let the turkey cool to room temperature (within 2 hours of cooking), then refrigerate until fully chilled.
Portion it: Slice or shred the turkey into manageable portions. This helps it freeze and thaw evenly.
Wrap it well: Use airtight containers, freezer bags, or wrap tightly in foil and plastic wrap. Remove as much air as possible.
Label it: Mark the date and contents. Cooked turkey lasts up to 3 months in the freezer.

Thawing Frozen Cooked Turkey
Refrigerator method (recommended): Place in the fridge for 24–48 hours depending on portion size.

Reheating Cooked Turkey
Oven: Place thawed turkey in a baking dish with a splash of broth, gravy or Jerk Marinade (Jerk Turkey). Cover with foil and reheat at 325°F/163C until it reaches 165°F/74C internally.
