I chat with Nick from Assembly about Timor-Leste as en emerging coffee origin thanks to Raw Material's wonderful work and how washed process affects coffee taste. Also we brew together this coffee in Nick's recommended recipe.

Roaster's recommended recipe:
Orea brewer (Fellow Stagg X brewer)
12g coffee - 200ml water
Grind coffee for cupping size (medium fine)
Heat up water at 98degree
Pour 50ml and bloom for 30 seconds
Pour 50ml each time for 3 times
Aim 2 minutes total brew time
