It's gluten-free breaded fresh soft young coconut meat that tastes similar to what people are used to, plus alternative mashed potatoes made with cauliflower, topped with a quick-easy to make butter alternative you can whip up in seconds. Buckwheat Breading
2 cups buckwheat kernels
Soak buckwheat for 2 hours. Drain, rinse and lay out in single layer on dehydrator mesh sheet, set to 120 degrees for 3-5 hours or until crunchy. Pulse in high speed blender or food processor till broken up into fine pieces. Pour breading into large bowl and set aside.
Dark “Turkey meat”
2 Tablespoons olive oil
2 Tablespoons Tamari
1/4 cup good water
2 or 3 portobello or other favorite mushroom, cut into 3/4 to 1 inch strips.
Add first 3 ingredients to a large bowl, and whisk together. Lay mushroom strips in marinade and leave for 10 minutes. For meatier texture and flavor, dehydrate for one hour. Dredge the mushrooms in the “breading” mixture then lay on dehydrator sheet and repeat with rest of mushrooms. Sprinkle minced sage and poultry seasoning generously on breaded mushrooms. Drizzle a little olive oil over them so they don’t dry out or squirt a little water with olive oil lightly over breaded mushrooms.
“White Meat”
1/2 pound coconut slices, cut in strips
1 1/2 cups cashew cream sauce or plain vegan yogurt
1/2 cup to 3/4 cup good water
Blend till smooth. Pour into bowl and dredge the coconut strips into the cream, making sure to coat all parts of coconut. Then drop in “breading” and cover to coat. Repeat until all mushrooms and coconut strips are “breaded”. Lay out in single sheet in dehydrator and spray or drizzle a LITTLE olive oil over “meat”. but not too much. Sprinkle fresh minced sage and poultry season and salt and pepper over everything and dehydrate for 8 hours at 120. Serve with walnut gravy.
