Artichoke hearts and Peas Tagine
The ingredients
1 pound of Beef meat
1 pound of fresh shelled peas
5 hearts of artichokes uncooked
2 tomatoes
1 onion
a bunch of parsley
1 tbsp of turmeric
1 tbsp of ground ginger
1 tbsp of salt
1/2 tsp of black pepper
1/8 of food coloring
2 potatoes
2 courgettes
1/4 cup of olive oil
How to
peel and chop the onion, the tomatoes, and the parsley.
Heat the olive oil in a deep pot and add the chopped onion and the meat. Add the spices, the parsley, the tomatoes, and mix to combine.
Add the peas, and the artichokes.
Cover with water.
Cover the pot with the lid and let everything cook for one hour.
Peel the potatoes and quarter
peel the courgettes and quarter them as well
place the potatoe sand the courgettes on top
return the pot to cook for about 2o minutes over low heat
Serve the tagine placing the meat first, then the peas, and the artichokes, the courgettes, and the potatoes on top.
