Kousa is a traditional Middle Eastern recipe that I grew up eating! It’s one of those labor of love meals that requires coring zucchini, making a stuffing, stuffing it in the zucchini and then cooking it all together. However, it only uses a handful of ingredients, and the result is a tender zucchini filled with delicious juicy meat and rice in a rich broth.

concentrated tomato paste (2 tablespoons)
tomatoes (5 pieces)
parsley + coriander 20/20g) in total 40g
garlic 40g
rice 260g
ground coriander 1 tablespoon
paprika soft 1 tablespoon
pepper spicy 4 pieces
Curcuma 1 teaspoon
pepper 1 teaspoon
eggplant 4 small +- 500g
zucchini of your choice +-1.5kg
salt to taste
minced meat 400g
oil 3/4 of a glass
bay leaf 1 piece
