📋 RECIPE CARD
Aloo ki Tarkari
Ingredients:
• Potatoes (round slices) — ½ kg
• Onion — 1
• Tomatoes — 2
• Green chilies — 2
• Salt — ½ teaspoon
• Turmeric powder — ½ teaspoon
• Red chilli powder — 1 teaspoon
• Cumin seeds — 1 teaspoon
• Mustard seeds — 1 teaspoon
• Fresh coriander — 2 tablespoons
• Chicken cube — 1
• Oil — as required
Method:
Heat oil and fry the onion. Then add the potatoes, tomatoes, and all the spices, and sauté well.
Add 1½ cups of water and the chicken cube. Cook until the potatoes are tender and the gravy becomes thick.
Finish by adding green chilies and fresh coriander, then turn off the heat.
Your Aloo ki Tarkari is ready to serve.


Chana Tarkari
Ingredients:
• White chickpeas — 250 g
• Baking soda — ½ teaspoon
• Mustard seeds — 1 teaspoon
• Nigella seeds (kalonji) — ½ teaspoon
• Dried fenugreek leaves (kasuri methi) — 1 tablespoon
• Red chilli powder — 2 teaspoons
• Salt — ½ teaspoon
• Oil — ½ cup
Method:
Soak the white chickpeas overnight. Wash them and boil them over low heat with four glasses of water and baking soda until they become completely tender. Once they are soft, mash them well.
Heat oil in a pan, then turn off the stove. Add red chilli powder, salt, nigella seeds, dried fenugreek leaves, and mustard seeds to the hot oil and mix.
Pour this tempering over the mashed chickpeas.
Your Chana Tarkari is ready to serve.


Poori Paratha
Ingredients:
• All-purpose flour — ½ kg
• Wheat flour — 1 cup
• Oil — 4 tablespoons
• Salt — ½ teaspoon
• Lukewarm water — for kneading
• Clarified butter or oil (for frying) — as required
Method:
In a bowl, add all-purpose flour, wheat flour, oil, and salt. Knead the dough using lukewarm water and let it rest for half an hour.After that, roll it out like a roti and fry it on a hot pan using ghee or oil.
