Here’s a hearty slow cooker recipe inspired by the traditional French cassoulet, it uses simple ingredients and doesn’t taste like sawdust. Sounds too good to be true? Trust me, you’ll have this on repeat in the cooler weather.
Ingredients:
1 small carrot
1 small onion
2 sticks celery
4 cloves garlic
2 tblsp tomato paste (thick stuff)
500g tomato passata (thin stuff)
250ml chicken stock
1/2 - 1 cup red wine (whatever)
Chicken (or bird of your choice)
Sausage (chicken or pork)
Pork belly (or bacon)
White beans - cannellini, butter beans, chickpeas
