Vegan Tuna Salad
I accidentally made this recipe when I was working with some veggie chicken years ago. I realized then that it tasted a lot like canned tuna. This recipe doesn't include chickpeas or any other typical vegan tuna. It also doesn't contain seaweed because tuna doesn't have a strong fishy flavor, and I don't believe seaweed is necessary. Now, no shame to chickpeas. They are a wonderful source of fiber and a good source of protein. I simply wanted my vegan tuna salad to taste closer to my memory of tuna salad.
