(recipe follows) Okonomiyaki is often translated as a "savory Japanese pancake", which is to say it's a pancake batter with lots and lots of cabbage folded into it. The batter is then fried on a grill or in a fry pan and served with a special sauce and mayonnaise (both will get their own videos later). The "pancake" can then be topped with bonito fish flakes, nori, or a special kind of red ginger.
Okonomiyaki is a great idea for what you can do with vegetables. I often alter the recipe by using beef stock in place of dashi and adding other seasonal vegetables with the cabbage for a kind of meatless burger or side dish. Let the idea inspire your creativity.
Ingredients
½ head of cabbage
about 50 grams of grated mountain yam (optional)
3 large eggs (or about 200 grams)
¾ cup dashi or ¾ cup water and 1 teaspoon instant dashi powder
1 teaspoon baking powder
1 teaspoon sugar
½ teaspoon salt
Directions
1. Combine everything but the cabbage and mix until smooth. Let rest for at least half an hour.
2. Add the cabbage in slowly, mixing to coat with the batter with each addition. When the batter can hold no more, stop.
3. Fry on a grill or in a skillet on low-med heat for about 7-10 minutes. Flip. cook the other side for 5-7 minutes.
4. Top with Okonomiyaki Sauce and mayonnaise. Add bonito flakes, nori powder, and/or red ginger if you like.
